
The Spanish are known for their love of cheese. Even if you have to pay more than one thousand euros for it. This is what happened at the recently held cheese festival: 30,000 euros were paid for a head of cheese.
A 2.1kg wheel of the semi-solid, tangy dairy product, which matures in the mountain caves of Asturias in northern Spain, was purchased by a local restaurant owner. He justified his decision regarding the price due to his passion for products and honoring the work of cheesemakers.

The sum of 30,000 euros or 32,000 dollars became a record. This Spanish cheese with cabrales mold, or rather the fact of paying such an amount for it, became a new Guinness world record.
However, it was not the only purchase at this festival that impressed those present. The same restaurant owner purchased the previous Guinness World Record cheese, another Cabrales cheese, sold in 2019 for €20,500 or $22,000.

According to the auction organizers, the record price for cheese is explained by the rather exhausting process of creating this product. First, the producer takes raw cow's milk or a mixture of cow's, sheep's and goat's milk, ages it for 4-5 months in the mountain caves of the Cabrales region in the Picos de Europa National Park. And only after ripening it is ready for use. The product is transported to the nearest point of sale and displayed at an approximate price of 30–35 dollars per kilogram.

As for the record-breaking cheese, it matured in a cave at an altitude of 1,400 meters at a temperature of 7 degrees for eight months.
